I first made this with summer, fresh picked blueberries and can I tell you... this is the bomb! For all you gluten free people, it's a treat when we get a delicious baked good that we don't have to feel guilty about! My family, who is not gluten free, loved this as well!
I always believe in moderation and treating ourselves when we need it! This is a great homemade recipe to start with!
I did substitute the milk for almond milk and nobody could tell the difference. I always use organic butter, as it has a shorter fatty acid chain and easier to digest, even for lactose intolerant peeps. Another tip.... this recipe makes 2 round cake pans and I froze one... worked like a charm!
