My husband and I recently tried this salad when we wanted something quick, easy and light for dinner. I used a mix of baby kale and the hardy, tall stalks of kale. I left out the beet greens, only because I didn't have any on hand. I also didn't use the tahini, since sesame doesn't work for me. It all still tasted great! Don't forget that any recipe can be tweeked to your liking and it will still come out tasty.... because it's ingredients you like!
